Squash ‘Cornell’s Bush Delicata’ has a beautifully sweet, nutty flavour that makes it perfect for roasting, baking and soups. It produces narrow, elongated fruits with cream‑yellow skin and fine dark green stripes along the ribs, though the occasional fruit may take on a more traditional pumpkin shape.
This variety can be eaten as soon as it reaches maturity, and the soft skin means it may not store as long as other winter squashes — but it more than makes up for it with excellent flavour and a higher yield than most delicata types. To prepare, simply halve the fruit, scoop out the seeds and cook; the skin is tender and fully edible.
