Spanish Sage is a smaller‑leaved variety with a stronger aroma and flavour than common sage, producing soft blue‑green leaves that are perfect for enriching meats, stuffings and Sunday roasts. It’s a hardy, attractive sub‑shrub too, with pale blue flowers in summer that sit beautifully in borders and pollinator‑friendly plantings.
The flavour is at its best in warm, dry conditions, and once established the plants need very little attention, coping well with drought. A light prune in spring encourages fresh new shoots with excellent flavour.
