The greenish-pink stems of Rhubarb, Victoria have tender flesh with an excellent balance of sweetness and acidity. Once established, this popular, traditional variety will produce a heavy crop, year after year.
During the first two years, resist the temptation to harvest, in order to allow the plant to become properly established. In spring, remove the emerging flower heads as they appear. From the third year, stems can be harvested from April to June, when the leaves have fully unfurled. Do not eat the leaves as they are poisonous.
